Key Lime Rice Bars (Print Version)

Chewy cereal bars blended with vibrant lime, crushed graham crackers, and a drizzle of white chocolate. Simple no-bake sweets ready fast!

# Ingredients:

→ Snacks Base

01 - 5 tablespoons of butter (unsalted)
02 - 6 key limes, divided for zest and juice
03 - 10 cups tiny marshmallows, separated into 8 cups and 2 cups
04 - 8 whole graham crackers, chopped (some for topping)
05 - 5 cups puffed rice cereal

→ Topping Drizzle

06 - ½ teaspoon vegetable oil or coconut oil
07 - 4 ounces vanilla bark or white chocolate

# Steps:

01 - Get a 9×13-inch dish, spray it with non-stick spray, and leave it aside.
02 - In a big mixing bowl, toss together the cereal and most of the chopped graham crackers. Save some for topping later.
03 - On low heat, melt the butter in a big pot. Once melted, throw in 8 cups of marshmallows and stir nonstop until they're all melted and smooth.
04 - Take the pot off the heat, and mix in about 1½ tablespoons juice and 2 teaspoons of zest from 4 limes into the melted mix.
05 - Pour the cereal and graham cracker mix along with 2 extra cups of marshmallows into the melted mixture. Stir it all up. It's fine if the extra marshmallows don't fully melt; that texture's great.
06 - With a greased spatula, push the mix evenly into your baking dish. Sprinkle the leftover graham cracker pieces on top and press down lightly.
07 - Put the white chocolate and oil in a small bowl. Microwave for 30 seconds; stir. Microwave for another 30 seconds if it’s not melted. Mix in about 1 teaspoon of zest from 1–2 limes.
08 - Trickle the lime-flavored white chocolate over the top. Let the whole thing set for at least 30 minutes to an hour before slicing up into bars.

# Helpful Notes:

01 - Keep them fresh in a container with a lid for 4–5 days.
02 - You’ll need about 6 key limes (total), split between steps.
03 - Can’t find key limes? Regular limes (2 or 3) work too.
04 - Wait for them to cool down fully before storing so they don’t get soggy.
