Peanut Butter Oat Cups (Print Version)

01 - 1/4 cup dark chocolate chips (optional topping)
02 - 1/2 tsp vanilla extract (optional)
03 - 1 cup rolled oats
04 - 1/2 cup natural peanut butter
05 - 1/4 cup honey or maple syrup
06 - Pinch of salt (only if peanut butter is unsalted)

# Instructions:

01 - Grab a bowl and toss in the oats, peanut butter, sweetener, vanilla, and salt. Stir it all together until sticky and evenly blended.
02 - Press small portions of the mixture into a mini muffin tray. Use liners or a silicone tray to make removing them a breeze.
03 - Warm up the chocolate chips in the microwave, stirring every 15 seconds. Spread or drizzle it over the cups how you like.
04 - Pop the tray in the fridge for about an hour so everything sets. Once firm, take them out and enjoy.

01 - Keep these in the fridge for a week or stash in the freezer to last longer.
02 - Swap peanut butter for almond or cashew butter if you prefer.
