Spicy Cajun Pasta (Print Version)

Cajun-spiced chicken and shrimp with veggies in a thick, creamy Parmesan wine sauce.

# Ingredients:

01 - ¾ cup grated Parmesan cheese.
02 - 1 cup chicken stock.
03 - ¾ lb. fettuccine or similar pasta, uncooked.
04 - ¾ cup Half & Half or heavy whipping cream.
05 - 1 garlic clove, finely chopped.
06 - 2 bell peppers, sliced lengthwise.
07 - 1 large onion, halved and thinly sliced.
08 - 1 tbsp. Cajun spice mix.
09 - 3 tbsp. olive oil for sauteing.
10 - 1 lb. deveined shrimp without shells.
11 - 1 lb. chicken thighs, boneless and cut into small chunks.
12 - ¾ cup dry white wine.
13 - Fresh parsley leaves for topping.

# Steps:

01 - Boil the pasta with a bit of salt until it's just tender. Drain the water and set aside.
02 - In a little olive oil, cook the shrimp and chicken with Cajun seasoning until fully cooked, then scoop them out of the pan.
03 - In the same skillet, stir the onion and peppers for around 5 minutes. Take them out once they soften.
04 - Let the wine and chicken stock simmer until reduced by three-quarters. Stir in Parmesan, garlic, and cream to make a smooth sauce.
05 - Mix the cooked meat, pasta, and veggies into the sauce. Toss until fully coated. Sprinkle parsley to finish.
