Strawberry Cheesecake Bites (Print Version)

Little pockets of cream cheese and homemade strawberry topping inside crunchy fried eggrolls. It’s creamy and crisp in every bite.

# Ingredients:

01 - 12 sheets eggroll wrappers.
02 - 2 tablespoons sugar (white kind).
03 - 1 cup strawberries, chopped up.
04 - Vegetable oil, enough for frying.
05 - Powdered sugar for a final sprinkle.
06 - 8 ounces soft cream cheese.
07 - 1 teaspoon vanilla extract.
08 - 1 teaspoon cornstarch.
09 - ¼ cup powdered sugar.

# Steps:

01 - Let the fried wrappers chill on some paper towels. Dust them real quick with more powdered sugar.
02 - Drop your filled rolls in hot oil and fry them until they turn golden, gently flipping them here and there. Takes about 2-3 minutes.
03 - Crank up your stove and heat up a deep skillet with oil until it hits 350°F.
04 - Roll from the bottom, tuck in both sides, then roll all the way and seal the edge with a dab of water.
05 - Spoon a tablespoon of cheesy mix and a little strawberry mix in the middle of each wrapper.
06 - Toss strawberries, sugar, and cornstarch into a small pot. Heat it up until it gets thick like jam. Let it cool off.
07 - Mash together the cream cheese, powdered sugar, and vanilla until it’s all smooth and creamy.
