Strawberry Oat Bars (Print Version)

# Ingredients:

→ Base

01 - 8 tablespoons melted unsalted butter
02 - 1/2 teaspoon ground ginger
03 - 1/2 cup light brown sugar
04 - 1 cup rolled oats
05 - Pinch of salt
06 - 3/4 cup plain flour

→ Filling

07 - 1 tablespoon white sugar
08 - 2 tablespoons fresh lemon juice
09 - 2 cups finely chopped strawberries
10 - 1 teaspoon cornflour

# Instructions:

01 - Set your oven to 375°F. Line a square 8x8 pan with parchment paper.
02 - Stir oats, flour, salt, ginger, and sugar in a bowl. Pour in the butter and mix until fully combined.
03 - Take out 1/2 cup of the oat mixture and set it aside. Press the rest firmly into the pan.
04 - Scatter chopped strawberries over the base. Dust them with cornflour, drizzle with lemon juice, and sprinkle sugar evenly.
05 - Sprinkle the saved oats over the strawberries. Bake for 25 to 30 minutes until browned and crisp.
06 - Allow it to cool completely. Then slice into bars.
