Set your oven to 375°F. Line a square 8x8 pan with parchment paper.

Stir oats, flour, salt, ginger, and sugar in a bowl. Pour in the butter and mix until fully combined.

Take out 1/2 cup of the oat mixture and set it aside. Press the rest firmly into the pan.

Scatter chopped strawberries over the base. Dust them with cornflour, drizzle with lemon juice, and sprinkle sugar evenly.

Sprinkle the saved oats over the strawberries. Bake for 25 to 30 minutes until browned and crisp.

Allow it to cool completely. Then slice into bars.
