Tzatziki Chicken Dish (Print Version)

This all-in-one meal combines juicy chicken, fluffy rice, fresh Mediterranean flavors, and a creamy tzatziki drizzle. So easy to make!

# Ingredients:

01 - 1 cup uncooked long grain white rice.
02 - 1/2 teaspoon each of onion powder and garlic powder.
03 - 1 pound chicken breast or thighs, cut into chunks.
04 - 1 teaspoon smoked paprika.
05 - 1/2 teaspoon ground cumin.
06 - 2 tablespoons olive oil.
07 - 2 tablespoons lemon juice.
08 - 1 medium zucchini, shredded (yields about 1 1/2 cups).
09 - 1/4 teaspoon black pepper.
10 - 2 cups chicken stock.
11 - 1 teaspoon fresh oregano, finely chopped (or 1/2 teaspoon if using dried).
12 - 1/4 teaspoon turmeric.
13 - 1 teaspoon thyme, freshly chopped (or 1/4 teaspoon dried).
14 - 1/8 teaspoon cayenne for some heat.
15 - Fresh herbs and a slice of lemon for topping.
16 - Tzatziki sauce to serve alongside.
17 - 3/4 teaspoon seasoned salt.
18 - 1 tablespoon parsley, minced (or 1/2 teaspoon dried).

# Steps:

01 - Spray a 9x13 dish with non-stick spray to prevent sticking.
02 - In the dish, combine chicken with the olive oil, lemon juice, and all the herbs and spices. Let it marinate for 30 minutes. Meanwhile, heat the oven to 375°F.
03 - Add the rice, zucchini shreds, and chicken broth to the dish with the marinated chicken. Mix well.
04 - Seal the dish with foil and bake for 40 minutes, allowing the liquid to absorb and the rice to soften.
05 - If the rice is a bit undercooked, re-cover it and bake another 5 minutes at a time until it's just right.
06 - Fluff everything with a fork, adjust seasonings as needed, and serve with tzatziki sauce and extra herbs on top.
